Pancit Sotanghon

Last night I watched the Philippine showbiz talk show "The Buzz" on the internet. When it was done they're thanking their sponsors and I heard they mentioned about pancit malabon. It really rung a bell. I suddenly craved for pancit. Went to the kitchen and checked if I have ingredients to make my own pancit. But since it was already late in the evening I waited until this night to make it.

Earlier i checked online for a simple recipe. I bumped into this site: http://www.tribo.org/filipinofood/recipes/sotanghon.html

I don't have the other ingredients so I made my own.

sotanghon noodles [my leftover 2 mon. ago]
chicken meat [skinless/boneless chicken breast]
chicken broth
celery
green bell pepper
onion
garlic
extra virgin olive oil
soy sauce
paprika
salt
pepper
lemon
hard boiled egg

I just followed the procedure and voila.....my pancit sotanghon!
